My beer experiments
My son gave me a beer brewing kit for Christmas. All the ingredients are pre-weighed and pre-packaged. You put everything into a bucket, add water, and let it ferment for a week. Then you pour it into bottles, and wait 3 weeks before you can drink it.
Making beer using a kit is too easy. I decided to make beer from scratch.

My Berliner Weisse style beer
I live in a sub-tropical climate. The indoor temperature in December is 29°C – much too hot for fermenting ale. So I decided to make a beer using malted sorghum and wheat, and fermented with my sourdough culture.

My continuously propagated ale
It is winter. Time to make ale! Making a 19 litre batch of ale is inconvenient. Instead of using the fermenter included in the kit, I fermented my beer in 2 litre plastic bottles. But this was inconvenient as well. Instead of a single 19 litre fermenter, I now had 3 or 4 plastic bottles with beer in various stages of completion. I wondered if it was possible to use a single fermenter, and continuously propagate the beer.

My caramel syrup beer
I use sugar to make caramel. Then I use the caramel to make beer. My caramel beer has a fiery orange brown colour. I have an Imperial topaz with the exact same colour!
